Pork Tenderloin, Avocado Sauce

The pesto rosso and prosciutto upload numerous taste to this simple roasted Beef Tenderloin.

  • 1 tbs pesto rosso

  • 1 tsp chili powder
  • 1 avocado
  • 2 tbs white balsamic vinegar
  • 1 tbs pesto
  • 1 tbs rooster broth
  • With a pointy knife, butterfly red meat (see notes).
  • Layer the Prosciutto, pesto rosso and basil leaves.
  • Roll the tenderloin again up and tie with kitchen string.
  • Sprinkle with chili powder.
  • Lay on a baking sheet and roast, 25 mins at 400F (200C).
  • Take away, duvet loosely with foil and let leisure 5 mins.
  • Purée avocado, vinegar, pesto and rooster broth
  • To serve:
  • Reduce red meat into 1″ (2.5cm) slices.
  • Spoon avocado sauce on plates, organize red meat slices on best.
