  • 6 tbs chopped recent tarragon
  • 3 tbs finely chopped capers
  • 2 tbs lemon juice
  • 1 tbs olive oil
  • Basting Sauce:
  • 2 tbs lemon juice
  • 2 tbs olive oil
  • 1/4 tsp celery salt
  • 1/4 tsp black pepper
  • Early within the day mix the tarragon, capers, lemon juice and olive oil.
  • Loosen the surface at the hen by means of slowly running your palms between the flesh and the surface.
